Ingredients

  • 1 kg cleaned octopus

  • 100 ml dry white wine

  • Salt, to taste

Instructions

  1. Place the cleaned octopus in boiling water with 2 tbsp vinegar and cook for 20 minutes to remove any mucous residue. Drain.
  2. In a heatproof baking dish, layer the potato, tomato, and onion slices. Season with salt, pepper, turmeric, and vegetable seasoning. Drizzle with olive oil and water.
  3. Place the octopus on top of the vegetables. Cover the dish tightly with aluminum foil.
  4. Bake at 150°C (300°F) for 1.5 hours until the octopus is tender and the vegetables are cooked through.
  5. Remove the foil and transfer the octopus to a serving plate while you finish the vegetables.
  6. Mix the white wine with chopped parsley and crushed garlic. Add butter to the vegetable juices in the baking dish and heat over medium stove heat.
  7. Stir gently as the butter melts and simmer for 2 minutes to meld the flavors.
  8. Remove from heat, return the octopus on top of the vegetables, and serve immediately.
