Ingredients

For the Potatoes:

  • 3-4 potatoes, boiled or roasted in skin
  • ¼ bunch fresh parsley, chopped
  • Coarse salt

For the Sausage and Vegetables:

  • 300 g Mangalitsa sausages (about 15-16 small links; pork or lamb sausages work too)
  • 1 medium white onion, sliced into rounds
  • 1 small red onion, sliced into rounds
  • 1 green bell pepper, cut into large squares
  • 1 tbsp olive oil
  • Salt and freshly ground black pepper

For the Spicy Garlic Sauce:

  • 8 tbsp olive oil
  • 1-2 garlic cloves
  • 2 tsp hot chili paste (adjust for heat preference)
  • 2 tsp tomato paste
  • ¼ tsp ground cumin
  • Salt, to taste

Instructions

1. Prepare the Spicy Sauce

  • Blend olive oil, garlic, chili paste, tomato paste, and cumin in a food processor or blender until smooth.
  • Season with salt to taste. Add 1 or 2 garlic cloves depending on how garlicky your sausages are.
  • Set aside and let the flavors meld until ready to use.

2. Cook the Vegetables

  • Heat olive oil in a large skillet or wok with a lid over high heat.

3. Cook the Sausages

  • In the same skillet, add sausages and 50 ml water. Immediately cover with a lid.

  • Remove lid and continue cooking until water evaporates completely and sausages start to sizzle in the oil (you’ll hear a change from bubbling to crackling).
  • Brown sausages on one side, then flip to brown the other side.
  • If oil splatters excessively, cover with the lid again as needed. This step takes about 10 minutes.

4. Combine and Finish

  • Return sausages to the bowl with sautéed vegetables, leaving the oil in the skillet.
  • Add 2 tsp of the spicy garlic sauce and gently mix everything together.
  • Transfer the mixture to a serving platter.

5. Prepare and Serve Potatoes

  • Peel the boiled or roasted potatoes and break them into chunks.
  • Sprinkle generously with coarse salt and chopped parsley.
  • Drizzle 2-3 tsp of the spicy garlic sauce over the sausages on the platter.
  • Serve potatoes alongside.
