  • 6 small potatoes
  • 2 eggs
  • 70 g spicy chorizo sausages (or spicy Hungarian sausages)
  • 1/4 tsp dried thyme (or oregano)
  • 1/2 tsp smoked paprika (or sweet paprika)
  • 1 tbsp oil
  • Salt and freshly ground black pepper

Instructions

  1. Peel (optional) and cut potatoes into cubes. Boil in salted water until tender but still firm enough not to break apart when pierced with a fork. Drain well.
  2. Slice chorizo into half rounds. Place in a dry skillet over low heat and cook just until it releases fat (do not crisp). Remove chorizo and set aside on a plate.
  3. In the same skillet with the rendered fat, add oil, crushed thyme, and paprika. Stir to combine. Add the drained potatoes, remove skillet from heat, and gently toss to coat potatoes evenly. Season with salt and black pepper. Add back the chorizo slices and mix gently.

  6. Bake at 200°C (390°F) for about 15 minutes, just until the egg whites are set but the yolks remain soft and runny.
  7. Serve immediately. Break the yolk with a fork and mix with the potatoes for a creamy, spicy bite.
