Ingredients
- 4 large eggs
- 250 g sugar
- 1 packet vanilla sugar
- Zest of ½ orange (or lemon)
- 250 ml milk
- 250 ml vegetable oil
- 350 g all-purpose flour
- ½ packet baking powder (approx. 7 g)
- 1 heaping tablespoon cocoa powder
- 50 g dark chocolate, melted (optional)
- 1 teaspoon instant coffee (Nescafé or similar)
- 1–2 tablespoons rum
Instructions
1. Prepare the Vanilla Batter
- Preheat oven to 180°C (350°F). Grease and flour a 23 cm round cake pan.
- Using a mixer, beat eggs with sugar and vanilla sugar until the sugar dissolves completely and the mixture is pale and fluffy.
- Add orange zest, milk, then oil, mixing continuously.
- Sift flour with baking powder and add slowly to the batter, mixing gently at low speed until smooth.
2. Divide and Flavor the Batter
- Measure the batter using a graduated cup (~1.2 liters total). Divide evenly into two bowls (~600 ml each).
- Leave one bowl plain (vanilla batter).
- To the other, add cocoa powder, melted chocolate (if using), instant coffee dissolved in rum, and mix until fully combined.
- (If no chocolate is available, increase cocoa powder to 2 tablespoons for a richer chocolate flavor.)
3. Assemble the Cake
- In the center of the prepared pan, spoon 3 tablespoons of vanilla batter.
- In the center of this vanilla batter, add 3 tablespoons of chocolate batter.
- Repeat this layering process, alternating batters in the center of the previous layer, creating concentric circles that thin out with each addition.
4. Bake
- Bake at 180°C for approximately 50 minutes.
- Test doneness by inserting a toothpick in the center; if it comes out clean, the cake is done.
- Allow the cake to cool before slicing.
💡 Tips
- Use fresh citrus zest for a bright, natural flavor boost.
- Creating the concentric circles carefully gives the classic marble effect once sliced.
- Leftover batter can be baked in muffin tins for delightful mini cakes.
