Instructions

1. Prepare the Zucchini

  • Peel and grate the zucchini using the coarse side of a grater, avoiding the seedy core area.
  • Squeeze the grated zucchini well by hand or wrap in a clean cloth to remove as much water as possible. Repeat to remove excess moisture.

2. Mix the Pattie Ingredients

  • In a bowl, combine the drained zucchini with crumbled feta, finely chopped green onions, dill, parsley, and minced garlic. Season with black pepper.
  • Mash everything lightly with a fork to evenly distribute the feta and herbs.

3. Add Egg and Binders

  • Beat the egg well and add only half of it to the mixture. Stir thoroughly.
  • Gradually add breadcrumbs and flour, one tablespoon at a time, until the mixture holds together well enough to form balls.

4. Shape and Fry

  • Form the mixture into small balls or patties.

  • Heat plenty of oil in a frying pan. Fry the patties for 1–2 minutes on each side until golden and crispy. Watch carefully, as they cook quickly.
