HOMEMADE CHOCOLATE FUDGE — RICH, CREAMY, AND DELIGHTFULLY NOSTALGIC

Making homemade chocolate fudge with my mother-in-law was a first for me—and it turned out so good it became the star of any party! The secret? The syrup’s consistency determines the fudge’s texture. Using unsweetened powdered milk lets you control the sweetness, but if you only find sweetened milk powder, reduce the sugar accordingly.

This recipe is so loved that it became the most voted recipe I’ve ever shared!

🕒 Prep Time: 10 min

🍳 Cook Time: 15–25 min (depending on syrup thickness)
🍽️ Yields: 1 batch (about 20–25 pieces)

Ingredients

  • 150 ml water
  • 400 g sugar
  • 100 g unsalted butter, melted and cooled
  • 250 g powdered milk (unsweetened)
  • 50 g cocoa powder
  • 1 tsp vanilla extract (or 1 tsp rum essence)
  • Hazelnuts (or almonds, walnuts, raisins, lightly toasted)

Instructions

1. Prepare Dry Ingredients

  • Mix powdered milk with cocoa powder.
  • Optional: sift the mixture for a smoother texture.

2. Make the Syrup

  • In a saucepan, bring water and sugar to a boil, stirring until sugar dissolves.
  • As the syrup boils, it will form white foam on top.
  • The syrup’s thickness will control your fudge’s texture:
    • For softer, chewy fudge, keep the syrup thinner.
    • For crumbly fudge, boil syrup until it’s thick and sticky like honey.
  • Test syrup by dipping a spoon and running your finger over the back — you’ll feel how sticky and thick it is.

3. Combine Syrup and Dry Mix

  • Remove syrup from heat once desired consistency is reached.
  • Gradually add the powdered milk-cocoa mixture in portions, stirring vigorously to combine smoothly.
  • Add melted butter and vanilla (or rum) essence and mix well.

4. Set and Garnish

  • Quickly pour mixture into a buttered tray and smooth with the back of a spoon dipped in cold water frequently.
  • Sprinkle nuts evenly on top, pressing them gently into the fudge.

5. Chill and Cut

  • Let the fudge cool to room temperature, then refrigerate until firm.
  • Thin syrup fudge needs overnight chilling, while thicker syrup fudge sets in 2–3 hours.
  • Once set, cut into squares and serve.

💡 Tips

  • Control fudge texture by adjusting syrup thickness carefully.
  • Use unsweetened powdered milk to adjust sweetness as desired.
  • Toast nuts lightly for enhanced flavor and crunch.
  • Use a spoon dipped in cold water to smooth fudge easily.
