Ingredients
- 500 g powdered milk
- 500 g sugar
- ½ cup water
- 200 g unsalted butter
- 5–6 tbsp cocoa powder
- 1 tsp vanilla essence
- Optional: nuts (walnuts, pistachios), raisins, or other dried fruits
- A little cooking oil (for greasing hands and plastic wrap)
Instructions
1. Prepare Butter and Workspace
- Soften butter slightly until creamy, then divide roughly in half.
- Spread 4 sheets of plastic wrap or cling film on your work surface and lightly grease with a bit of oil.
2. Prepare Cocoa and Plain Milk Powder
- In a large bowl, mix 250 g powdered milk with cocoa powder.
- In another bowl, place the remaining powdered milk plain.
3. Make Sugar Syrup
- In a saucepan, combine sugar and water. Heat gently until sugar dissolves and mixture begins to boil, forming foam on top.
- Boil for an additional 1 minute once foaming starts.
4. Combine Cocoa Syrup Mixture
- Working quickly, pour half the hot syrup over the cocoa-milk powder mixture and stir rapidly.
- Add half the softened butter, stirring vigorously until fully incorporated into a thick, lava-like paste.
5. Form Cocoa Chocolate Sheets
- Divide the cocoa mixture evenly over the 4 plastic sheets.
- Using oiled fingers, spread each portion into a thin rectangular sheet.
6. Prepare White Chocolate Mixture
- Reheat the remaining syrup until boiling, then pour over the plain powdered milk.
- Add vanilla essence and stir well.
- Add the remaining butter and mix until smooth.
7. Layer and Cool
- Divide the white chocolate mixture evenly over the cocoa sheets.
- Spread thinly with oiled fingers.
- Optionally sprinkle raisins, nuts, or dried fruits over the white chocolate and press gently to adhere.
- Allow to cool at least 15 minutes until set (if softer, let 15–30 minutes more).
8. Roll and Chill
- Using the plastic wrap edges, carefully roll each sheet into a tight cylinder along the long side.
- Refrigerate for several hours until firm.
9. Slice and Serve
- Cut rolls into slices and serve chilled.
- Store remaining chocolate rolls in the refrigerator.
💡 Tips
- Work swiftly during syrup mixing to prevent premature setting.
- Lightly oil your hands and plastic wrap to spread fudge evenly.
- Adjust the cocoa powder amount for deeper chocolate flavor.
- Use quality nuts or dried fruit for added texture and flavor.
- Keep refrigerated to maintain firmness.
