These easy-to-make stuffed mushrooms are a warm appetizer or a fantastic side dish. Filled with a creamy blend of cheeses and fresh dill, topped with melted smoked cheese, they’re perfect for cozy dinners or entertaining guests.

Ingredients

  • 20 champignon mushrooms (medium size)
  • 150 g cream cheese with herbs or onion (like Almette)
  • 100 g Danish white cheese
  • 2 sprigs fresh dill, chopped
  • 125 g cheese for topping (smoked kasseri or mozzarella recommended)
  • Black pepper, to taste
  • Chili flakes or sweet/spicy paprika, to taste
  • 1 tbsp lemon juice (optional)

Instructions

1. Prepare the Filling

  • Mix cream cheese with Danish white cheese and chopped dill.
  • Grate the topping cheese finely.

2. Prepare the Mushrooms

  • Remove mushroom stems.
  • Quickly rinse mushrooms in water mixed with lemon juice to prevent browning during baking.

Note: Washing without lemon juice can cause discoloration as seen in the photo.

3. Pre-bake Mushrooms

  • Place mushrooms stem-side down on a parchment-lined baking tray.
  • Bake at 220°C (430°F) for 15 minutes to release excess moisture for better texture and appearance.
  • Remove tray, discard mushroom juice, replace parchment paper, and blot mushroom caps if juice has collected.

4. Stuff and Top Mushrooms

  • Turn mushrooms stem-side up on the tray.
  • Fill each cap with about ½ teaspoon of cheese mixture.
  • Cover filling with grated cheese, only on the filling area—not the edges—to prevent cheese from melting excessively into the tray.
  • Sprinkle black pepper and chili flakes or paprika on top.

5. Bake and Grill

  • Bake at 220°C (430°F) for 15 minutes.
  • For the last 5 minutes, switch oven to grill (broil) to brown and crisp the cheese topping. Watch carefully to avoid burning.

6. Serve

  • Serve warm for best flavor; also enjoyable at room temperature or cold.
