MEDITERRANEAN-STYLE SAUTÉED CAULIFLOWER WITH HERBS AND LEMON

A fresh, vibrant cauliflower dish infused with Mediterranean flavors—turmeric, oregano, garlic, fresh herbs, and lemon juice. Quick to prepare and packed with bright, aromatic notes.

⏲️ Prep Time: 10 min

🍳 Cook Time: 15 min

🍽️ Yields: 2 servings

🥣 Ingredients

  • 1 small cauliflower (about 400 g), broken into florets and sliced
  • 2 large garlic cloves, crushed
  • Zest of 1/4 lemon (about 1/2 teaspoon)
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon dried oregano
  • 1–2 tablespoons lemon juice
  • 1/4 bunch parsley, chopped
  • 5 fresh mint leaves, chopped
  • 3 large basil leaves, chopped
  • 2 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper to taste

👩‍🍳 Instructions

  1. Slice cauliflower florets for even and quick cooking. Include any broken pieces—they caramelize nicely.
  2. Heat olive oil in a wide pan or skillet. Add cauliflower, sprinkle with salt, pepper, oregano, and turmeric. Stir for 1 minute until coated and turmeric colors cauliflower yellow.
  3. Add 1 tablespoon water, immediately cover with a lid, and cook over medium-low heat for 10 minutes, stirring halfway.
  4. Remove lid, add crushed garlic and lemon zest. Stir well, cover again, and cook another 5 minutes.
  5. Check for light browning; if cauliflower looks steamed, increase heat and sauté uncovered for a few minutes until edges lightly brown, especially smaller pieces.
  6. Remove pan from heat, stir in chopped parsley, mint, basil, and lemon juice.
  7. Serve immediately for best flavor and texture.

💡 Tips

  • Fresh herbs add brightness; substitute or add rosemary or thyme if preferred.
  • Adjust lemon juice to taste for extra zing.
  • Use a heavy-bottomed pan for even heat distribution.
  • Don’t overcook to keep cauliflower tender-crisp.
