  2. Mix sour cream with egg and salt, then pour over the flour mixture. Knead gently by hand just until dough comes together.
  3. Divide dough into 3 or 4 equal parts, flatten each into a disc, wrap in plastic wrap, and chill several hours or overnight.
  4. Grind poppy seeds, semolina, and sugars finely in a coffee grinder. Combine with milk and bring to a boil, simmer 2–3 minutes. Let filling cool completely.
  5. On a floured parchment or plastic wrap-lined surface, roll out one dough disc into a thin rectangle or square, trimming edges for neatness. If dough sticks, dust with flour.
  6. Spread about 2 cm thick line of filling along one short edge using a teaspoon. Roll dough over filling tightly. Using a sharp knife, cut the roll into 2–3 cm pieces. Place rolls seam-side down on parchment-lined baking trays. Repeat with remaining dough.
  7. Chill trays in fridge for 10 minutes before baking.
  8. Bake at 200Β°C (390Β°F) for 15–17 minutes until lightly golden on top.
  9. While still warm, roll the buns in vanilla powdered sugar. Serve best with a cup of warm milk.
