CHOCOLATE-FILLED BRAIDED SWEET BREAD

A beautifully braided sweet bread with rich, velvety chocolate filling. The layers of dough and chocolate create a stunning swirl pattern and a perfect balance of soft bread and intense cocoa flavor.


🥣 Ingredients

Dough:

  • 300 g all-purpose flour
  • 40 g sugar
  • 1/4 tsp salt
  • 3/4 packet dry yeast (6 g)
  • 1 packet vanilla sugar
  • 2 small eggs (room temperature)
  • 45 g melted butter
  • 60 ml warm milk
  • 45 ml warm water

Chocolate Filling:

  • 20 g flour
  • 20 g cocoa powder
  • 50 g sugar
  • 1 egg white
  • 80 ml water
  • 15 g dark chocolate, chopped
  • 10 g butter

Yield

1 loaf (approx. 25 x 10 cm pan)


Instructions

  1. Prepare the Chocolate Filling
  • Mix flour, sugar, and cocoa powder.
  • Whisk in egg white until combined.
  • Gradually add water, stirring continuously.
  • Cook over medium heat, whisking until thickened to a paste and pan bottom is visible when stirred.
  • Remove from heat, stir in chopped chocolate and butter until melted and smooth.
  • Cool completely.
  • Spread filling into a rectangle (~12 x 18 cm) in a small plastic bag and refrigerate until use.
  1. Prepare the Dough
  • Combine flour, sugar, and salt.
  • Beat eggs and mix with warm milk, water, and melted butter.
  • Add wet ingredients, then yeast and vanilla sugar, followed by dry ingredients to bread machine or mixer.
  • Knead and let rise until doubled (or knead by hand and let rise 1 hour).
  1. Assemble and Shape
  • Roll dough into a 20 x 35 cm rectangle.
  • Place chocolate filling in center.
  • Fold short edges over filling, then fold long edges to seal tightly. Pinch edges firmly.
  • Flip dough seam-side down.
  • Roll out to 15 x 45 cm and fold into thirds lengthwise.
  • Flip seam down again.
  • Roll to 15 x 35 cm and fold into thirds again.
  • Flip seam down once more and roll out to 15 x 30 cm.
  1. Braid
  • Cut dough lengthwise into two strips, leaving 2 cm uncut at top.
  • Twist each strip tightly.
  • Braid the two twisted strips together and place into a greased loaf pan.
  1. Proof and Bake
  • Let rise 45 minutes at room temperature.
  • Preheat oven to 220°C (428°F).
  • Place loaf in oven, reduce heat immediately to 180°C (356°F).
  • Bake 30 minutes until golden and cooked through.
