Dough:

  • 400 g all-purpose flour

  • 60 g melted butter
  • 80 ml warm milk
  • 60 ml warm water

Filling:

  • 150 g sugar
  • 1 heaping tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 80 g melted butter

Instructions

  1. Prepare the Dough
  • Mix flour, sugar, and salt in a bowl.
  • Beat eggs and combine with warm milk, water, and melted butter.
  • In a bread machine or mixer, add wet ingredients first, then sprinkle dry yeast and vanilla sugar, followed by dry ingredients.
  • Knead and let rise for 1 hour at room temperature. (Alternatively, knead by hand and let rise.)
  1. Make the Filling
  • Combine sugar, cinnamon, and nutmeg.
  • Melt butter separately.
  1. Assemble Layers
  • Lightly flour work surface and roll risen dough into a 30 x 50 cm rectangle.
  • Brush entire surface with melted butter.
  • Evenly sprinkle cinnamon-sugar mixture over the buttered dough.
  1. Create Stacks and Slices
  • Cut dough along the 30 cm side into six 5 cm strips.
  • Stack strips on top of each other to form a layered block.
  • Cut the stacked dough into 6–7 cm slices.
  1. Arrange in Pan
  • Grease a 25 x 10 cm loaf pan with melted butter and lightly dust with flour.
  • Place dough stacks side by side in the pan.
  • Brush tops with additional melted butter and sprinkle some extra cinnamon sugar.
  1. Final Proof and Bake
  • Cover pan with plastic bag and proof in a warm place for 50 minutes.
  • Bake at 180°C (356°F) for 30 minutes until golden.
