SWEET AND SPICY SUMMER SHRIMP SKILLET (Inspired by Turkish Karides Güveç)

Ingredients

  • 15 fresh shrimp, peeled and deveined
  • 1 small onion (about 50 g), finely chopped
  • 2 semi-spicy Bulgarian peppers, diced
  • 1 small tomato (about 150 g), grated
  • 12 small cherry tomatoes (preferably colorful), whole
  • 35 g cow cheese (or mozzarella), grated
  • 2–3 sprigs fresh parsley, chopped
  • 2 tbsp olive oil
  • ¼ tsp sweet paprika
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Rinse and pat dry shrimp thoroughly with paper towels.
  2. Heat olive oil in a medium skillet (16–18 cm diameter). Add chopped onion and diced peppers; sauté for about 5 minutes until slightly softened. Season with salt and black pepper.
  3. Add shrimp and cook briefly, stirring until shrimp turn pink all over (about 2 minutes). Remove shrimp from skillet immediately.
  4. Add grated tomato, whole cherry tomatoes, and paprika to the vegetables; sauté until cherry tomatoes start to burst (about 3 minutes).
  5. If your skillet is not oven-safe, transfer contents to a shallow ceramic baking dish.
  6. Remove skillet from heat. Return shrimp to the skillet or dish. Sprinkle half the chopped parsley over shrimp and vegetables.
  7. Top with grated cheese, focusing more toward the center and leaving edges visible. Sprinkle remaining parsley on top.
  8. Bake in a preheated oven at 200°C (390°F) for 5–7 minutes, until cheese melts and sauce bubbles around edges (do not brown cheese).
  9. Serve hot with fresh bread.
