ONE-PAN GARLIC SHRIMP WITH TOMATO AND HERBS
A delightful vacation-inspired one-pan shrimp dish that combines juicy shrimp, roasted tomato puree, garlic, fresh herbs, and butter. Perfectly paired with toasted bread and a glass of Prosecco, this recipe is easy to prepare and bursting with Mediterranean flavors.

Ingredients
- 500 g raw shrimp, peeled and deveined
- 50 g butter + extra for spreading on bread
- 2 tbsp fresh lemon juice
- 2 garlic cloves, crushed
- 1 medium ripe tomato
- ΒΌ bunch fresh parsley, chopped
- 10 large fresh basil leaves, chopped
- 8 slices baguette (or 3 slices rustic bread)
- Olive oil
- Salt, to taste
Instructions
- Pat shrimp dry with paper towels, season with salt, and toss with 1 tablespoon olive oil.
- Spread a thin layer of butter on one side of each bread slice.
- Slice tomato into moderately thick slices to hold shape when cooked. Lightly oil both sides.
- Heat a large skillet (about 20β26 cm diameter) over medium-high heat. Place bread butter-side down and toast for 1β2 minutes until golden.
- Add tomato slices to skillet and cook 2 minutes per side. Remove tomatoes to a bowl, peel off skin (it should come off easily), and mash with a fork. Discard any tough parts near the core. Season with a pinch of salt.
- Wipe skillet clean if tomato juices have caramelized on the bottom.
- Cook shrimp in batches without overcrowding, about 2 minutes per side, until pink and lightly browned.
- Return all shrimp to the skillet and remove from heat. If skillet is very hot, let it cool slightly for 1 minute.
- Add butter and swirl skillet to melt and coat shrimp. Immediately add lemon juice, return skillet to heat, and bring to a gentle boil.
- Stir in mashed tomatoes and chopped parsley. Simmer together until sauce thickens slightly, about 2 minutes.
- Add crushed garlic and chopped basil, cooking for another minute. Adjust seasoning with salt as needed.
- Serve immediately with toasted bread.
