SPICY GARLIC SHRIMP WITH CHILI AND CASHEWS

Ingredients
Shrimp and Marinade:
- 400 g peeled shrimp
- 2β6 dried hot chili peppers (adjust to spice preference)
- 3 garlic cloves, crushed
- 1 tsp ground ginger (or 1 tsp fresh grated ginger)
- 5 scallions (spring onions), sliced (separate whites and greens)
- 1 handful peanuts or cashews
- 2 tbsp vegetable oil
Marinade:
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp orange juice
- 1 tsp cornstarch
- 2 pinches salt
- 2 pinches pepper (Sichuan preferred, black pepper acceptable)
Sauce:
- 2 tbsp soy sauce
- 1 tbsp orange juice
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp sugar
- 2 tsp cornstarch
- 150 ml cold water
Instructions
- Prepare all ingredients beforehand for a smooth cooking process.
- Mix marinade ingredients, pour over shrimp, and marinate for 15β30 minutes.
- Combine sauce ingredients in a bowl.
- Crush garlic cloves and slice scallions into whites and greens. Slice dried chili peppers into rings.
- Heat oil in a wok over high heat. Quickly fry chili peppers, then add scallion whites and crushed garlic. SautΓ© briefly until garlic turns golden. Stir in ginger.
- Add marinated shrimp with marinade to the wok. Stir-fry rapidly for 2β3 minutes until shrimp turn pink.
- Pour sauce into the wok and cook until sauce thickens, about 2 minutes. Taste and adjust salt if needed.
- Remove from heat, stir in scallion greens and nuts. Cover and let rest for a few minutes.
- Serve hot with steamed basmati rice.
