Ingredients

  • 170 g all-purpose flour
  • 2 tbsp brown sugar
  • Pinch of salt
  • 150 g cold butter, cut into flakes
  • 4–6 tbsp ice-cold water (chilled in freezer for 10 min)
  • 3 tbsp rhubarb jam
  • 8 large strawberries, sliced
  • 1 tbsp powdered sugar (for dusting)

Instructions

  1. Combine flour, sugar, and salt in a food processor and pulse briefly to mix. Add butter flakes and pulse about 5 seconds until mixture resembles coarse crumbs.
  2. With the processor running, gradually add cold water one tablespoon at a time until dough forms a ball (about 5 tbsp used).
  3. Remove dough with cold hands (rinse under cold water if needed), shape into a disc, wrap in plastic wrap, and refrigerate for at least 1 hour.
  4. Meanwhile, slice strawberries.
  5. Line a tart pan (about 27 cm diameter) with parchment paper and lightly dust with flour.
  6. Place chilled dough in center and, using floured hands, gently stretch into a rough 27 cm circleβ€”not perfect is fine!
  7. Spread rhubarb jam over the center, leaving a 5 cm border free. Arrange strawberry slices in a circular pattern starting from the outer edge over the jam.
  8. Fold the free dough edges up around the fruit, using floured hands and parchment paper to help if dough sticks. Press gently to seal edges. Sprinkle a little sugar over the crust for crispiness. Optional: brush crust with melted butter or egg yolk before sugar for extra browning.
  9. Bake in a preheated oven at 200Β°C for 45–50 minutes until crust is golden and fruit is bubbling.
  10. Halfway through baking, add any remaining strawberries on top if desired to fill gaps.
  11. Let tart cool slightly, then dust edges with powdered sugar. Serve once fully cooled.
