SARDINE AND CREAMY AVOCADO TOASTS WITH PICKLED ONION
A perfect party snack combining crispy baguette, creamy avocado, flavorful sardines, and tangy quick-pickled red onion, all brightened by fresh lemon zest. This guacamole-inspired toast is simple, refreshing, and irresistibly tasty.

Ingredients
- 10 slices baguette
- 10 small canned sardines (or 5 large, about 20 g each)
- 1 ripe avocado
- 1 small red onion (about 40 g)
- 4 sprigs fresh parsley, finely chopped
- 4 tbsp lemon juice (divided)
- Lemon zest, for garnish
- A drizzle of olive oil
- Sea salt, to taste
Instructions
- Thinly slice red onion into rings and sprinkle with salt. Toss and let sit for 10 minutes.
- Squeeze excess liquid from onion using your hand or cheesecloth. Add 3 tbsp lemon juice, mix well, and let marinate for another 10 minutes. Stir in chopped parsley.
- Place sardines (whole if small, halved and deboned if large) in a wide dish. Add marinated onion and 1 tbsp of sardine oil. Let rest while preparing toasts.
- Drizzle baguette slices lightly with oil on both sides. Grill in a hot pan until lightly charred and crispy. Remove and cool slightly.
- Just before serving, mash avocado flesh with a fork, season with 1 tbsp lemon juice and a pinch of salt.
- Spread a generous teaspoon of avocado mash on each toasted baguette slice. Top with a sardine piece and some pickled onion.
- Sprinkle with sea salt and a little lemon zest. Serve immediately.
