Ingredients
- 1 large eggplant (about 600 g), cut into 2 cm cubes
- 5 garlic cloves, crushed
- 1/2 tsp cumin seeds
- 1 bay leaf
- 1/4 tsp chili powder (or flakes, or 1 hot chili pepper)
- 1 onion, chopped
- 1 tomato, diced (peeled if desired)
- 1 tsp turmeric powder
- 1/2 tsp ground ginger
- 1 tbsp curry powder
- 150 g plain yogurt
- 200 ml water or vegetable broth
- 3 tbsp oil
- A few sprigs fresh parsley or cilantro, chopped
- Salt, to taste
Instructions
- Wash eggplant and cut into larger cubes (~2 cm). Salt lightly and drain on paper towels to remove excess moisture.
- Meanwhile, chop onion, dice tomato, and crush garlic.
- In a non-stick pan, dry-fry eggplant cubes without oil until lightly browned. Remove and set aside.
- In the same pan, add oil, cumin seeds, chili powder, bay leaf, and crushed garlic. Fry quickly for about 1 minute, being careful not to burn the garlic.
- Add chopped onion and cook until softened.
- Stir in diced tomato, turmeric, ground ginger, and curry powder. Cook for 1-2 minutes until the tomato juice evaporates.
- Return the fried eggplant cubes to the pan. Add yogurt and water or vegetable broth, stirring well.
- Bring to a boil, then simmer over medium heat until the sauce thickens to your liking.
- Adjust salt if needed, turn off heat, and stir in chopped parsley or cilantro.
- Serve warm with lightly salted boiled rice mixed with 1 tsp sesame oil for extra aroma.
💡 Tips
- Salting and draining eggplant reduces bitterness and moisture.
- Dry-frying eggplant cubes first ensures they absorb less oil.
