Finally, I decided to unlock the treasure from the freezer: fish from Croatia. I started with something new for me—dorada. I prepared it simply in the oven, combining fish and vegetables in one dish for a delicious and visually stunning meal. Perfect for a romantic dinner with good wine and soft lighting.

Ingredients

  • 2 dorada fish, cleaned and washed
  • 4-5 medium potatoes, sliced into rounds (not too thick)
  • 1 large onion (~150 g), thinly sliced
  • 1 carrot, thinly sliced
  • 1 bunch fresh parsley (reserve 2 sprigs for garnish)
  • 5 garlic cloves, crushed
  • 1/2 tsp turmeric powder
  • 1/2 tsp homemade vegeta seasoning, ground
  • 6 tbsp olive oil
  • 2 lemons
  • Salt and freshly ground black pepper

Instructions

  1. Slice potatoes into medium-thick rounds, carrots thinner rounds, and onion into thin strips.
  2. Arrange vegetables in a large baking dish (~30 cm diameter). Season with salt and pepper to taste.
  3. Finely chop parsley (except 2 sprigs reserved for garnish). Mix parsley with crushed garlic, turmeric, vegeta seasoning, and a pinch of salt.
  4. Gradually add olive oil (about 1 tbsp at a time) and mash the mixture into a paste. Add roughly 150 ml water to create a sauce.
  5. Pour the parsley sauce over the vegetables and toss well to coat evenly. Cover the dish tightly with aluminum foil.
  6. Bake in a preheated oven at 200°C (390°F) for 25-30 minutes.
  7. Meanwhile, pat the fish dry with paper towels. Make 3-4 diagonal cuts on one side of each fish.
  8. Season fish generously with salt inside and out. Drizzle with juice of 1 lemon (half a lemon per fish) and let sit at room temperature until vegetables are ready.
  9. Remove foil from the vegetable dish and place dorada on top. Sprinkle with black pepper.

If the vegetable sauce has reduced too much, add about 50 ml water to the dish.

  1. Return to the oven and bake for another 20 minutes.
  2. For a beautiful crust, switch oven to grill (broil) and cook for 3-5 minutes, watching closely until fish skin is nicely browned and crisp.
  3. Remove from oven, sprinkle with reserved parsley, and insert lemon wedges into the fish cuts.
  4. Serve immediately with a glass of white wine and fresh bread to soak up the delicious sauce.
