QUINCE JAM WITH CARDAMOM AND ROSE BUDS
Chunks of quince in a fragrant syrup with cardamom and rose buds. This jam has a beautiful color and intense flavors while keeping the quince pieces intact. Perfect on buttered bread, cheeses, or yogurt.

Ingredients
- 1.2 kg quinces (with peel)
- 650 g sugar
- 900 ml water
- Juice of 1/2 lemon
- 10 green cardamom pods
- 3 dried rose buds (or 1 tsp rose water, optional)
Instructions
- Wash the quinces thoroughly, do not peel. Cut each quince into 6-8 pieces, remove the core, then cut each piece into 4-5 smaller chunks. Place the pieces in water mixed with lemon juice.
- Put quinces and water in a pot and bring to a boil. Reduce heat and simmer for 5 minutes until quinces soften slightly.
- Remove quinces with a slotted spoon, add sugar to the water and cook on low heat until sugar dissolves (stir occasionally).
- Return quinces and their cores to the syrup and bring to boil again. Reduce heat and let simmer gently without stirring for about 1.5 hours until syrup turns orange and quinces are tender.
- Add crushed cardamom pods and rose buds 10 minutes before finishing.
- Remove spices and pour hot jam into sterilized jars (sterilize jars at 200Β°C for 20 minutes). Wipe jar rims clean, seal jars, and place back in oven for 15 minutes.
- Turn jars upside down for 10 minutes to create vacuum seal, then wrap in a blanket and let cool overnight.
