Ingredients
- 500 g pork tenderloin
- 4 tbsp olive oil
- 4 fresh sage leaves
- 2 garlic cloves
- 4 fresh basil leaves
- 4 sprigs fresh parsley
- 1 can (400 g) white beans, drained
- ½ can (400 g) whole peeled tomatoes
- Salt and pepper to taste
- 1 tsp sweet paprika
Instructions
- Pat pork tenderloin dry with paper towels. Slice one garlic clove thinly and make small incisions in the meat to insert the slices, infusing flavor.
- Rub the pork well with salt, pepper, and sprinkle paprika on top. Place in an ovenproof dish.
- In a small saucepan, warm olive oil gently with the second garlic clove sliced and sage leaves. Let sit for 5 minutes to infuse the oil. Remove garlic slices and pour the infused oil and sage over the pork.
- Add ½ cup water to the dish. Cover tightly with foil to seal completely. Roast at 220°C (430°F) for 1½ hours.
- About 10 minutes before pork is done, drain the beans and tomatoes (reserve juices). Break tomatoes with a fork. Place in a colander and season with salt, pepper, chopped parsley, and basil. Let drain 10 minutes.
- When pork is ready, remove foil, scatter the bean and tomato mixture around the meat, gently mixing with the pan juices. Roast uncovered for another 10 minutes to warm the garnish.
- Remove from oven and tent with foil for 10 minutes to let the meat rest and juices redistribute. Cutting immediately will cause dry meat as juices escape.
- Slice pork and serve with the bean and tomato side. Enjoy!
