- 1 packet vanilla sugar
- 1 whole egg
- 1 egg yolk
- Granulated sugar or vanilla powdered sugar for coating
Instructions
- Melt butter over low heat and let it cool completely (just cooled, not melted cold).
- Sift together flour, cocoa powder, cinnamon, salt, baking powder, and baking soda.
- Beat the sugars with the eggs using a mixer until thick and creamy, about 5 minutes, until the color resembles milky coffee.
- Gradually add the melted butter in a thin stream while continuing to beat. The mixture will thicken and show whisk marks.
- Add the flour mixture in two batches, folding gently with a spatula just until absorbed. Do not overmix. The dough will be firm, moldable, and non-sticky.
- Scoop heaping tablespoons (about 55-60 g each) and form balls. Roll each ball in granulated sugar or vanilla powdered sugar.
- Bake at 175°C (350°F) for 15-17 minutes. Cookies will be soft when removed but will firm up as they cool.
- Use a wide spatula to carefully lift cookies off the tray once cooled.
