Ingredients

  • 1 large onion (approx. 150 g), finely chopped
  • 2 bell peppers (approx. 250 g), diced
  • 3 large garlic cloves, crushed
  • 2 small zucchinis (approx. 500 g), sliced
  • 1 eggplant (approx. 350 g), sliced (keep the skin)
  • 3 medium ripe tomatoes (approx. 450 g), peeled and diced
  • 1 tsp Herbes de Provence
  • 1 bay leaf
  • A few sprigs fresh parsley, chopped
  • Salt and black pepper, to taste
  • 5 tbsp olive oil

Instructions

  1. Slice zucchini and eggplant. If slices are large, cut into halves or quarters. Lay the slices in a single layer on kitchen towels, sprinkle lightly with salt, cover with more towels, and let sit for about 30 minutes to draw out excess moisture.
  2. Heat olive oil in a wide skillet over medium-low heat. Sauté onion and bell peppers until softened.
  3. Add crushed garlic and cook for 1 more minute.
  4. Add zucchini, eggplant, Herbes de Provence, bay leaf, salt, and pepper. Continue to sauté for 10 minutes, stirring frequently, until vegetables are tender but not mushy.
  5. Blanch tomatoes for 1 minute, peel off skins, and dice.
  6. Stir tomatoes into the vegetable mixture and cook for another 5 minutes. Adjust salt to taste.
  7. Remove from heat and stir in chopped parsley.
  8. Serve warm or cold alongside couscous.
