Ingredients

- 150 ml milk

- 50 g sugar
- 1 tsp ground cinnamon
Instructions
- Beat sugar and egg until light and frothy, using a whisk or mixer.
- Add melted butter and mix again for 1 minute.
- Stir in milk.
- In a separate bowl, whisk together flour, baking powder, nutmeg, and lemon zest. Gradually fold dry ingredients into wet ingredients just until combined.
- Grease six muffin tins with butter and dust with flour. Fill each about 2/3 full with batter.
- Bake at 190°C (375°F) for 20 minutes, until golden and a toothpick comes out clean.
- Remove from oven and let cool briefly before removing from tins.
