  • 4 potatoes

  • Salt, pepper, and paprika to taste

Instructions

  1. Prepare Broth and Cook Pork:
    Place 1 liter of water in a pot. Add sliced smoked pork, whole onion (quartered), garlic cloves, and bay leaves. Simmer over medium heat for 20–30 minutes until pork is tender. Remove pork; discard onion, garlic, and bay leaves.
  2. Cook Vegetables:
    Peel and dice potatoes and celery root; slice leek into rounds. Add vegetables to the remaining broth and cook about 20 minutes until tender.
  3. Mash Vegetables:
    Drain vegetables, reserving about 1 cup of broth. Mash the vegetables until smooth.
  4. Combine and Season:
    Return the vegetable mash to the pot. Season with salt, pepper, and paprika. Slowly add reserved broth while stirring continuously over low to medium heat. Cook about 5 minutes until well combined and creamy.
  5. Prepare Peas:
    Drain canned peas. If using fresh peas, boil them separately in a little water after removing vegetables from the broth, then drain.
  6. Finish Dish:
    Add peas and sliced smoked pork back into the mash. Heat gently until just simmering.
  7. Serve:
