Ingredients

  • 2 cups cooked white beans (soaked overnight)
  • 50 ml cooking oil
  • Juice of 1/2 lemon

Instructions

  1. Soak beans overnight. Next day, boil beans in salted water with 2 bay leaves (change water once if desired) until soft.
  2. Pass cooked beans through a potato ricer or fine sieve to remove skins and get a smooth paste. If you don’t have a ricer, mash beans well as for traditional bean spread.
  3. Add about 50 ml of the reserved cooking water to avoid dryness, mixing thoroughly.
  4. Slowly drizzle in the oil like making mayonnaise, stirring constantly to emulsify.
  5. Repeat the same process with lemon juice, tasting as you go to achieve desired acidity.
  6. Season with salt and freshly ground black pepper.
  7. Fold in finely minced onion.
  8. Let the spread rest for 30 minutes to allow flavors to meld before serving.
