The easiest way to cook dark green lentils with truly satisfying results. Using minimal ingredients allows the lentils’ natural flavor to shine. For best taste, use dark green lentils like Puy or Eglouvia, black lentils, or any variety that holds its shape when cooked.

  • 250 g dark green lentils (Puy, Eglouvia, black lentils, or any firm lentil)
  • 1 small onion, finely chopped
  • 1 tbsp tomato paste (heaping)
  • 1 bay leaf
  • 2 tbsp oil
  • Salt, to taste
  • Freshly ground black pepper, to taste

👩‍🍳 Instructions

  1. 💧 Rinse lentils several times in cold water until water runs clear. Drain well.
  2. 🍳 Sauté finely chopped onion in oil over medium heat until softened (about 5 minutes).
  3. 🍅 Add tomato paste and cook for 2 minutes, allowing it to caramelize slightly.
  4. 🍲 Add drained lentils and 750 ml water. Bring to a boil.
  5. 🔥 Reduce heat to low, cover, and simmer gently for 30–40 minutes until lentils are tender but intact.
  6. 🌿 Towards the end, if excess water remains, remove the lid and let liquid reduce. Season with salt and freshly ground black pepper.
  7. 🍽️ Serve simply or as a side with fish, chicken, or pork. For fasting meals, enjoy with toasted bread drizzled with oil and sprinkled with oregano, or with whole wheat flatbread.
