- 1 medium-small ripe tomato (about 150 g or 5 tbsp tomato pulp), grated
- 2 tbsp neutral-flavored oil (such as mild olive oil)
- Salt, freshly ground black pepper
- Pul biber (Turkish chili flakes), to taste
- Fresh parsley, chopped for garnish

- 🧅 Sauté finely chopped onion and chopped peppers in oil over low heat until the onion softens without browning, about 10 minutes.
- 🍅 Add grated tomato pulp and continue to cook, stirring occasionally, until the oil separates and collects around the edges, approximately 5 minutes. Season with salt, black pepper, and pul biber chili flakes.
- 🥚 Crack eggs into a bowl and gently beat only until yolks are broken and lightly mixed with whites—do not overmix.
- 🔥 Reduce heat to low and pour eggs into the pan. Using a wooden spoon, stir gently and continuously, focusing on the edges and bottom where curds form first. Stir slowly but steadily to achieve a soft, creamy texture.
