  4. Pour beaten eggs over the cornmeal, tilting the pan to spread evenly. Cover with a lid and cook over medium heat until the top is almost set (about 30 seconds for 2 eggs in a 24 cm pan).
  5. Remove lid and sprinkle grated goat cheese and sliced scallions on half the omelette. Fold the empty half over the filling.
  6. Cover again and cook on low heat for another 30 seconds.
  7. Slide the omelette onto a plate. Fold once more if desired to form a triangle shape.
