🥄 Ingredients

Omelettes:

  • 3 eggs
  • 2 tsp flour (about 5-6 g)
  • 1 tbsp water or milk
  • Salt to taste
  • 2 tsp oil

Sheep Cheese Yogurt Spread:

  • 80 g Greek yogurt (10% fat)
  • 40 g sheep cheese or feta
  • 2 pickled hot peppers (or 1 semi-spicy Bulgarian pepper)
  • 1/2 small red onion, finely chopped
  • Freshly ground black pepper

Filling:

  • 2 tsp za’atar spice
  • 2 handfuls mixed fresh greens (baby spinach, valerian, arugula)
  • 1 avocado, diced
  • 8 fresh mint leaves, chopped
  • 1 tbsp olive oil

Decoration:

  • Chili flakes
  • Sesame seeds
  • Za’atar
  • 1 tbsp olive oil

👩‍🍳 Instructions

  1. Mash sheep cheese to remove lumps, then mix thoroughly with Greek yogurt until creamy. Add finely chopped pickled peppers and onion. Season with black pepper.
  2. Dice avocado and sprinkle lightly with salt. Chop mint finely.
  3. Beat eggs with salt, then add flour and water or milk. Beat again until smooth and no lumps remain. The mixture should be thin, like crepe batter. Measure about 160 ml total.
  4. Heat a 25 cm non-stick pan, lightly greased with about 1 tsp oil.
  5. Pour half the egg mixture (80 ml) into the pan, tilting to spread thinly like a crepe. Cook for about 30 seconds until edges set.
    If excess batter appears, tilt pan and spoon it back into the measuring cup.
  6. Flip the omelette carefully (use a blunt knife to loosen edges, then flip by hand). Cook for another 10 seconds.
  7. Transfer omelette onto a plate, cooked side down.
  8. Repeat with remaining batter for a second omelette.
  9. Spread half the sheep cheese mixture evenly on each omelette. Sprinkle 1 tsp za’atar and half the chopped mint (substitute parsley or dill if preferred).
  10. Arrange half the diced avocado on one side, top with fresh greens, and drizzle 1/2 tbsp olive oil over.
  11. Roll omelette tightly; slice diagonally to serve or keep whole for takeaway.
  12. Brush rolled omelette with a little olive oil. Sprinkle chili flakes, extra za’atar, and sesame seeds on top.
  13. Serve immediately or at room temperature. Perfect for packing and taking on the go.
