🥄 Ingredients

  • 500 g fresh shrimp (unpeeled)
  • 1 cup long-grain basmati rice (200 g)
  • 1 bell pepper (½ red + ½ green)
  • 1 large onion
  • 2 garlic cloves
  • 2 canned tomatoes
  • 50 ml dry white wine
  • 4 tbsp oil
  • ¼ tsp cumin powder
  • ½ tsp turmeric
  • Salt and freshly ground black pepper

  1. In a large pot, bring 1.5 liters salted water to a boil. Add shrimp and cook just until they turn pink, about 1-2 minutes. Drain shrimp, reserving the cooking water. Return water to pot.
  2. Peel shrimp, removing head, shell, and tail (leave tails on 6 shrimp for garnish). Cut peeled shrimp into 3-4 pieces.
  3. Add shrimp heads, shells, and tails (except reserved tails) back to the pot with water. Simmer for 15 minutes to make shrimp broth. Strain and discard solids.
  4. Finely dice onion and bell peppers. Sauté in heated oil until soft. Add canned tomatoes (mashed with a fork) and cook until oil separates and rises to surface.
  5. Add crushed garlic and white wine. Cook until wine evaporates and oil separates again. Remove vegetables and set aside.
  6. In the same pan, add rice, 2½ cups shrimp broth, cumin, turmeric, salt, and pepper. Bring to boil, cover, and simmer on very low heat until rice is tender and liquid absorbed (15-20 minutes).
  7. Stir cooked vegetables and chopped shrimp into the rice. Adjust seasoning.
  8. Arrange reserved shrimp tails on top for decoration. Cover and let stand 10 minutes before serving.
