  • 120 g round grain rice
  • 500 ml milk
  • 170 g sweetened condensed milk
  • 1 egg
  • A handful of raisins
  • Cinnamon (or cardamom, vanilla extract, almond extract)
  • Pinch of salt

👩‍🍳 Instructions

  1. Combine rice, milk, and sweetened condensed milk in a pot. Stir frequently and cook over low heat until rice begins to swell and soften.
  2. Add raisins, salt, and about ¼ tsp cinnamon (or preferred spice). Continue to cook gently, stirring constantly to prevent sticking.
    Note: If using liquid extracts (vanilla or almond), add them later to preserve aroma.
  3. When rice is tender and most of the milk is absorbed, beat the egg well.
  4. Gradually add about 6 tablespoons of the hot rice mixture into the beaten egg, stirring constantly to temper it.
  5. Reduce heat to very low (no boiling) and pour the egg mixture back into the pot, stirring thoroughly. Cook for an additional 3 minutes to thicken.
    Add liquid extracts now if using.
  6. Serve warm in individual bowls or glasses, sprinkled lightly with cinnamon.
