- Beat eggs with 1 tbsp water, salt, and pepper until combined. Pour over the potato mixture in the pan, stirring briefly to evenly distribute potatoes.
- Cook on stovetop until edges begin to set (about 1 minute).
- Transfer the skillet to a preheated oven at 190°C (375°F) and bake for 13 minutes until omelette is fully set.
- Remove from oven, slide omelette onto a wooden board, and cut into 8 slices.
