  • 4 eggs
  • 50 g bacon, sliced into strips
  • 1 small onion (approx. 50 g), sliced thin
  • 1 medium potato (approx. 200 g), peeled and diced into 1 cm cubes
  • 2 sprigs parsley, chopped
  • 1 small sprig tarragon (or dill), chopped
  • 1 tbsp oil
  • Salt and freshly ground black pepper

  1. In a 16 cm skillet over low heat, cook bacon strips until fat renders and bacon starts to brown but is not crispy. Remove bacon from pan.
  2. Add 1 tbsp oil to the bacon fat remaining in the skillet.
  3. Sauté onion and potatoes over medium-low heat for about 10 minutes until potatoes are tender and onions smell sweet, stirring occasionally.
  4. Return bacon and chopped herbs to the pan. Mix well and season with salt and pepper.
  5. Beat eggs with 1 tbsp water, salt, and pepper until combined. Pour over the potato mixture in the pan, stirring briefly to evenly distribute potatoes.
  6. Cook on stovetop until edges begin to set (about 1 minute).
  7. Transfer the skillet to a preheated oven at 190°C (375°F) and bake for 13 minutes until omelette is fully set.
  8. Remove from oven, slide omelette onto a wooden board, and cut into 8 slices.
  9. Serve warm with a fresh salad.
