  • 1 large cauliflower, broken into florets
  • Breadcrumbs (as needed)

  • 1 egg

  1. Steam or boil cauliflower florets in salted water until tender. Drain well.
  2. Grease an ovenproof dish with butter, including the sides. Sprinkle breadcrumbs all over the dish to coat it evenly.
  3. Layer cauliflower in the dish, seasoning each layer with salt and pepper. Sprinkle a little breadcrumbs and grated cheese, then add 2 tablespoons of sour cream. Repeat layers until cauliflower is used up, finishing with a cauliflower layer on top.
  4. Beat the egg with a few tablespoons of sour cream and pour evenly around the cauliflower layers.
  5. Bake in a preheated oven at 200°C (400°F) for 30–40 minutes until golden and bubbling.
  6. For extra browning, switch on the grill for the last 5 minutes, watching carefully to avoid burning.
