  • 2 medium potatoes
  • 100 g ricotta cheese
  • 60-70 g smoked salmon
  • 1/2 small red onion (I used spring onion)
  • 1/2 lemon
  • 1 tbsp extra virgin olive oil
  • Salt and freshly ground black pepper

Instructions

  1. Wash the potatoes well and bake them in their skin at 180°C (350°F) for about 1 hour, or until a fork slides easily in. Let them cool.
