🥄 Ingredients

  • 500 g starchy potatoes
  • 150 g broccoli florets
  • 1 small leek (about 50 g), quartered lengthwise and sliced thin
  • 100 g hard cheese (like Parmesan or fermented Horezu cheese), grated
  • 50 g soft cheese (like Sofia), grated
  • 2 tbsp sour cream (15% fat)
  • 1 small egg
  • 1 tbsp oil
  • Salt and freshly ground black pepper, to taste

👩‍🍳 Instructions

  1. 🥔 Peel potatoes and slice. Boil in salted water until almost tender. Add broccoli florets, cover, and cook together for 5 more minutes. Drain broccoli and potatoes separately.
  2. 🧅 Sauté sliced leek in heated oil until very soft.
  3. 🔪 Finely chop the cooked broccoli.
  4. 🍴 Mash potatoes with a fork until mostly smooth but not pureed. Combine potatoes with sautéed leek and chopped broccoli. Season with salt and black pepper.
  5. 🧀 Stir in grated cheeses and mix well. Taste and adjust salt if needed. Let the mixture cool slightly.
  6. 🥚 Whisk egg with sour cream and fold into the potato mixture until evenly combined.
  7. 🍳 Lightly oil four pastry rings and place them on an oiled baking tray lined with parchment paper. Fill rings with the vegetable mixture, pressing down evenly.
