Instructions
- Slice zucchini and eggplant. If slices are large, cut into halves or quarters. Lay the slices in a single layer on kitchen towels, sprinkle lightly with salt, cover with more towels, and let sit for about 30 minutes to draw out excess moisture.
- Heat olive oil in a wide skillet over medium-low heat. Sauté onion and bell peppers until softened.
- Add crushed garlic and cook for 1 more minute.
- Add zucchini, eggplant, Herbes de Provence, bay leaf, salt, and pepper. Continue to sauté for 10 minutes, stirring frequently, until vegetables are tender but not mushy.
- Blanch tomatoes for 1 minute, peel off skins, and dice.
- Stir tomatoes into the vegetable mixture and cook for another 5 minutes. Adjust salt to taste.
- Remove from heat and stir in chopped parsley.
- Serve warm or cold alongside couscous.
