Ingredients
- 220 g unsalted butter, at room temperature
- 150 g granulated sugar
- 300 g all-purpose flour
- 120 g Toffifee chocolates (or any caramel chocolate pieces)
- 1 tbsp instant coffee granules
- 1 tbsp warm water
- 1 tsp vanilla extract
Instructions
- Dissolve the instant coffee granules in warm water and let cool completely.
- Using a mixer, cream the butter and sugar together until light and fluffy, about 3 minutes.
- Add the cooled coffee mixture and vanilla extract; continue mixing until the dough is smooth and creamy.
- Gradually add the flour and mix just until incorporated. The dough will be sticky.
- Chop the Toffifee chocolates into small pieces and fold gently into the dough with a spoon.
- Transfer the dough into a large plastic bag. Roll out the dough to about 1/2 cm thickness using a rolling pin, adjusting the bag with your hands to avoid creases.
- Refrigerate for at least 2 hours or up to 2 days to firm up the dough.
- When ready to bake, remove dough from the fridge (it will be very firm). Cut open the bag and slice the dough into squares or your preferred shapes.
- Prick each cookie 1-2 times with a fork and place on a baking sheet lined with parchment paper.
- Bake at 160Β°C (320Β°F) for 25 minutes. Keep an eye during the last 5 minutes; cookies should remain slightly soft when pressed and should not brown.
- Allow to cool completely on the baking sheet before serving.
