- Beat eggs well with a pinch of salt and 1/2 tbsp water until combined.
- Heat a 22-24 cm skillet over medium-high heat. Add oil, then sprinkle cornmeal evenly across the pan bottom by tilting and shaking the pan.
- Reduce heat to medium and wait about 30 seconds until cornmeal sizzles and bubbles in the oil. Avoid letting it brown or burn.
- Pour beaten eggs over the cornmeal, tilting the pan to spread evenly. Cover with a lid and cook over medium heat until the top is almost set (about 30 seconds for 2 eggs in a 24 cm pan).
- Remove lid and sprinkle grated goat cheese and sliced scallions on half the omelette. Fold the empty half over the filling.
- Cover again and cook on low heat for another 30 seconds.
- Slide the omelette onto a plate. Fold once more if desired to form a triangle shape.
- Serve warm with fresh tomatoes.
