Ingredients

  • 500 g champignon mushrooms
  • 2 large garlic cloves, crushed

  • 2-3 sprigs fresh parsley, chopped
  • Salt and freshly ground black pepper
  • 3 tbsp oil

Instructions

  1. Clean mushrooms by removing stems and wiping caps with a damp cloth. Slice caps.
  2. In a wide pan or cast-iron skillet (preferred for higher sides to reduce splatter), heat a little oil over medium-high heat.
  3. Sauté mushroom slices in batches without overcrowding to allow browning. Sprinkle with salt and black pepper. Cook about 2 minutes per batch until nicely browned. Add a little oil between batches as needed.
  4. Transfer cooked mushrooms to a deep plate as you finish each batch.
  5. In the same pan, add remaining oil and sauté crushed garlic for 30 seconds until fragrant.
  6. Stir in turmeric and garam masala, mixing just until dissolved in oil.
  7. Return all mushrooms and their juices to the pan. Bring to a gentle boil.
  8. Add chopped parsley. If there is excess liquid, let it simmer briefly to reduce; otherwise, remove pan from heat immediately.
  9. Let the pan contents settle for 2-3 minutes, then stir in the yogurt until fully incorporated.

Tip: If using thick yogurt, thin it gradually with milk or water to a pourable consistency before adding to the pan.
