CREAMY SPANISH AIOLI – WHITE, FLUFFY, AND VERSATILE
This white, fluffy aioli transforms into a texture similar to white chocolate mousse after chilling. A perfect accompaniment to KFC wings, fries, fish croquettes, and more. Customize the flavor by experimenting with different oils (sunflower, olive) or adding fresh herbs.

🥄 Ingredients
- 2–3 large garlic cloves
- 100 ml full-fat cold milk
- 200 ml oil (sunflower or olive oil)
- 6 sprigs fresh parsley
- Salt, to taste

- 🧄 In a mortar, crush garlic cloves with a pinch of coarse salt. Slowly add 4 tablespoons of oil, mixing like making mayonnaise, until you get a smooth garlic paste.
- Optional shortcut: add crushed garlic directly to blender for a stronger, sharper flavor.
- 🔄 Transfer garlic paste to a blender container. Add milk and remaining oil.
- 🤖 Blend with an immersion blender, moving it gently up and down for about 3 minutes until the sauce thickens to a consistency similar to thick sour cream.
- 🌿 Add chopped parsley and salt to taste. Blend briefly to evenly distribute parsley.
- 🧊 Pour aioli into a jar and refrigerate overnight. The aioli will thicken further as it chills.
