Ingredients

Espresso & Cream:

  • 4 short espresso shots
  • 100 ml heavy cream (35% fat)

Zabaione Custard:

  • 4 egg yolks
  • 50 g granulated sugar
  • 50 ml whole milk
  • 1 tbsp rum

Instructions

  1. Whip the heavy cream until it holds soft peaks. Set aside.
  2. In a heatproof bowl, beat egg yolks and sugar with an electric mixer until pale yellow and creamy (3-4 minutes). Gradually add milk and rum while continuing to mix.
  3. Place the bowl over simmering water (double boiler), ensuring the bowl does not touch the water. Whisk continuously at low speed until the mixture thickens to a smooth, frothy custard that flows in ribbons off the spoon.
    Note: Zabaione should be prepared fresh and used immediately as it does not keep well.
  4. Divide the zabaione evenly among 4 cappuccino cups.
  5. Slowly pour hot espresso into each cup—the espresso will settle at the bottom while the zabaione remains on top.
  6. Spoon a dollop of whipped cream over each drink.
  7. Lightly dust with cinnamon or cocoa powder. Serve immediately.
