Ingredients

- 125 g butter
- Zest of 1 orange
- 50 g powdered sugar (vanilla-flavored optional)
- 1 heaping tablespoon brown sugar
- 1 tablespoon orange liqueur (e.g., Cointreau)
- 50 ml brandy, cognac, or bourbon
- Juice of 1 orange
- Juice of ½ lemon
Instructions
- Fold prepared crepes into quarters and keep warm until needed.
- Blend butter, orange zest, and powdered sugar until creamy.
- Squeeze fresh orange juice and have all ingredients ready.
- In a large skillet (about 30 cm diameter), melt the orange butter mixture and simmer for 2–3 minutes. Stir using the cut side of half a lemon pierced with a fork. When the sauce slowly returns after dragging the lemon, proceed.
- Add orange juice and simmer for 1 minute more.
- Place crepes into the sauce one by one, soaking both sides, overlapping slightly if pan space is limited.
- Sprinkle brown sugar evenly over crepes.
- For the flambé: remove skillet from heat. Pour orange liqueur and brandy into one side. Light the alcohol with a match or by tilting the pan toward the stove flame—protect your face and keep a safe distance.
- Once the flames ignite, return the skillet to heat and gently shake to spread flames evenly.
- While flambéing, carry the skillet to the table for a dramatic presentation.
- Use a spatula to transfer crepes onto warm plates, spooning sauce over them. Serve with ice cream in summer for an extra treat.

- Prepare crepes and spread each with the orange butter mixture. Fold into quarters.
