Aromatic marinated olives that are more flavorful and colorful than plain olives. Perfect to serve alongside assorted cheeses and those parmesan biscuits I mentioned recently.

🍰 Yields: About 150 g marinated olives
🥄 Ingredients
- 100 g olives (green, black, or mixed)
- 50 g telemea cheese (or feta or fresh sheep cheese), cut into small cubes
- 1 sprig fresh rosemary
- 2 bay leaves
- 2 sprigs fresh parsley, chopped
- 1/2 roasted bell pepper, sliced (or 2–3 sun-dried tomatoes in oil)
- 8 tbsp olive oil
- 2 tbsp fresh lemon juice
- 10 grinds chili pepper (or 1 fresh hot chili), adjust to taste
👩🍳 Instructions
- 🌶️ Roast bell pepper as per your favorite method, peel and slice into thin strips.
- 🫒 Pit olives if necessary (mine were green and stuffed with almonds).
- 🌿 Chop herbs finely.
- 🧀 Cube the cheese into small pieces.
- 🥣 In a bowl, combine olives, cheese, herbs, roasted pepper, olive oil, lemon juice, and chili. Mix gently to combine.
- ❄️ Cover and refrigerate for at least 1 day, up to 1 week to let flavors meld.
- 🍸 Serve as an appetizer, ideal on a cheese board or at a buffet—try presenting in martini glasses for flair.
