  4. In a wide pot, combine raspberries, sugar, sparkling wine, and salt. Bring to a medium boil.
  5. Using a potato masher, gently crush raspberries once softened (about 15 minutes in).
  6. Reduce heat and simmer for 30 minutes, stirring frequently to prevent burning. Skim off pink foam that forms on top.
  7. Add fresh mint sprigs and simmer an additional 15 minutes to infuse flavor.
  8. Test jam set by placing a spoonful on a chilled plate for 1 minute; tilt plate—if jam flows slowly, it’s ready. If not, continue boiling in 5-minute increments and retest.
  9. Remove mint sprigs.
  10. Pour hot jam into sterilized jars, wipe rims clean, seal tightly. Invert jars for 10 minutes to create a vacuum seal.
