Ingredients
- 500 g medium shrimp (about 25 pieces), peeled and deveined (tails left intact)
- Salt, chili flakes
Garlic Parsley Butter:
- 30 g butter, room temperature
- ¼ bunch fresh parsley, finely chopped
- 2 garlic cloves, minced
- Pinch of salt
Instructions
- In a mortar, combine parsley, garlic, and a pinch of salt. Pound until you get a coarse paste. If needed, add 1 tsp olive oil to help with crushing.
- Add butter to the paste and continue pounding until the butter is evenly colored green.
- Clean shrimp by removing heads and shells, leaving tails intact. Carefully butterfly each shrimp along the back, keeping halves connected. Remove the dark vein by gently pulling it out.
- Arrange shrimp in a single layer on a baking tray, spacing about 2 cm apart, with the buttered side facing up.
- Place ¼ teaspoon of garlic parsley butter on each shrimp and spread evenly using the back of a spoon. Sprinkle lightly with salt and chili flakes.
- Preheat oven grill to 250°C. Place the tray about a palm’s distance below the grill (second rack from the top).
- Grill shrimp for 3 minutes until the butter melts, shrimp turn white on top and orange underneath, and begin to curl slightly.
- Remove from oven, squeeze fresh lemon juice over shrimp, and sprinkle coarse sea salt. Serve immediately with lemon wedges.
💡 Tips
- Be careful not to cut shrimp completely in half; keep the two sides attached.
- Use fresh parsley for the best aroma and vibrant color.
- Serve with rustic bread to soak up the buttery juices.
