🥣 Ingredients

  • 1 small cauliflower (600–650 g, yielding about 500 g florets after trimming)
  • 1 small carrot (optional, grated)
  • 1 large garlic clove, crushed
  • 1/2 tsp ground cumin
  • 1/4 tsp chili flakes
  • 1/4 tsp turmeric (optional)
  • 1/8 tsp ground cinnamon
  • 2 pinches ground cloves
  • Salt and freshly ground black pepper
  • 1/4 bunch fresh parsley, chopped
  • 2 tbsp lemon juice
  • 50 g golden raisins, soaked in hot water and drained
  • 35 g roasted cashews
  • 4 tbsp olive oil

Instructions

  1. Prepare Cauliflower “Couscous”
  • Break cauliflower into florets, trimming off hard stems.
  • Pulse florets briefly in a food processor (2–3 quick pulses per batch) until finely chopped but not mushy. Alternatively, finely chop by hand.
  • Optionally, grate carrot over the cauliflower mixture for added sweetness and color.
  1. Soak Raisins
  • Cover raisins with hot water to soften while preparing other ingredients.
  1. Sauté and Spice
  • Heat olive oil in a large skillet over high heat.
  • Add crushed garlic and spices (cumin, chili flakes, turmeric, cinnamon, cloves) to the oil; stir briefly to release aromas.
  • Add cauliflower couscous and toss to coat evenly.
  • Sauté, stirring occasionally, for 5 minutes until slightly softened but still textured. Season with salt and pepper during cooking. You’ll notice a sweet aroma when ready.
  1. Finish and Serve
  • Remove from heat.
  • Stir in chopped parsley, lemon juice, drained raisins, and roasted cashews.
  • Gently fluff with a fork to combine and aerate.
  • Adjust seasoning with salt if needed.
  • Serve promptly.

💡 Tips

  • Avoid over-processing cauliflower to preserve texture.
  • Sauté briefly to soften without losing the distinct couscous-like feel.
  • Toasted cashews add crunch and richness.
  • Golden raisins balance spices with natural sweetness.
  • Experiment with other spice blends like Indian curry or lemon zest for variation.
