Ingredients
- 6 starchy potatoes (about 1 kg)
- 350 g cooking cream (15% fat)
- 100 g matured goat cheese
- 1 egg
- 1 tbsp butter (about 30 g)
- 1 garlic clove
- 2 sprigs fresh thyme
- 1 pinch freshly grated nutmeg
- Salt, black pepper
Instructions
- Cream the butter with the crushed garlic. Generously butter a 15 x 23 cm oven-safe dish with this garlic butter.
- Slice the potatoes thinly (like chips).
- In a blender, combine the egg, cream, goat cheese, and nutmeg until smooth.
- Place a layer of potatoes in the dish. Season with salt, plenty of black pepper (to taste), and sprinkle some chopped thyme leaves. Continue layering potatoes similarly until used up. The last layer should be potatoes sprinkled only with salt.
*Note: If you forget to add thyme between layers, you can tuck whole sprigs around the edges before baking (like I did). - Distribute the remaining butter over the top.
- Pour the cream mixture evenly over the potatoes, covering them well.
- Cover the dish tightly with foil and bake at 180°C for 30 minutes.
- Remove the foil and bake for another 30 minutes at 180°C, until potatoes are tender and the top is set.
*Optional: sprinkle some grated Parmesan on top for extra flavor. - Let rest for 15 minutes before serving warm.
