GREEK-STYLE GRILLED MUSHROOMS WITH GARLIC AND OREGANO

Ingredients
- 1 large container of oyster mushrooms (Pleurotus)
- 4 garlic cloves
- 5 sprigs fresh parsley
- 4 tbsp extra virgin olive oil
- Dried oregano, to taste
- 1 tbsp lemon juice
- Salt, to taste
Instructions
1. Prepare the Mushrooms and Garlic Oil
- Wipe mushrooms clean with a damp paper towel. Trim any tough stems.
- Brush the smooth side (opposite the gills) of the mushrooms with olive oil.
- Slice 2 garlic cloves thinly.
- Crush the remaining 2 cloves in a mortar and cover with about 4 tbsp olive oil to create an infused garlic oil (mujdei).
- Finely chop the parsley.
2. Grill the Mushrooms
- Preheat a grill pan over high heat for about 5 minutes. Reduce heat to medium.
- Place mushrooms on the pan with the gills facing up. Sprinkle salt over the gills.
- Grill for about 4 minutes until grill marks form and the gills look moist.
- Flip the mushrooms and grill for another 2 minutes until the gills dry out and grill marks appear on that side as well.
3. Layer and Season
- Transfer mushrooms to a bowl in layers.
- After each batch, sprinkle a pinch of parsley and oregano, add a few garlic slices, and drizzle about 2 tsp of the infused garlic oil (try to get more oil than garlic pulp).
- Keep the bowl covered.
4. Finish and Serve
- Once all mushrooms are grilled, gently toss them with lemon juice and adjust salt if needed.
- Serve warm or at room temperature—flavors improve if left to rest for 1–2 hours.
