Ingredients

  • A drizzle of oil

  • ½ cup fine couscous (cappuccino cup size)
  • ½ cup boiling water
  • 2 tbsp lemon juice
  • 2 green onions, finely chopped
  • 1 bunch fresh parsley, chopped
  • Blue cheese (gorgonzola, Roquefort, or similar), cut into small cubes
  • Salt, to taste

Instructions

1. Prepare the Mushrooms

  • Remove mushroom stems and gently wipe caps with a damp cloth.
  • Drizzle mushrooms with lemon juice and coat evenly with oil.

2. Grill the Mushrooms

  • Heat a grill pan until very hot.
  • Place mushrooms stem-side up and grill for 5 minutes.
  • Drain any liquid collected in caps, flip mushrooms, and grill for another 5 minutes on the other side.
  • Transfer to a plate, season with salt, pepper, and chili to taste, add a teaspoon of oil, and toss gently. Let rest while preparing filling.

3. Prepare the Couscous Filling

  • Combine couscous with salt and lemon juice.
  • Pour boiling water over couscous, cover with a plate, and let sit for 5 minutes.
  • Fluff couscous with a fork to separate grains.
  • Stir in chopped green onions and parsley.
  • Adjust seasoning with salt and lemon juice to taste.

4. Assemble the Mushroom Sliders

  • On half of the grilled mushrooms, place a cube of blue cheese in the indentation left by the stem.
  • Top each with a generous spoonful of couscous mixture.
  • Cover each with a second mushroom cap and secure with a toothpick through the center to hold the slider together.
